This no-bake bird's nest cookie recipe is one of my son's absolute favorites. It's the perfect treat for Easter, Christmas Time, or any special occasion throughout the year. Grab your ingredients and let's get to making these bird nest cookies recipes.

If you bake with your children, then these are an easy way to get them involved and they are fun to make. Easy cookies mean they will want to help more often and soon you will come home to already baked cookies by your kids!

The added bonus for this red velvet cookie recipe is no need for red food coloring all over the place and all over your and your children's fingers.

As for the flavor of the Haystack cookie, I used milk chocolate (my kid's favorite). They can be made with whatever flavor of chocolate you have on hand or enjoy more. We have made them with dark chocolate (my favorite), white chocolate chips, and semi-sweet chocolate chips as those are typically what we have at the house. We've even made them with a mixture of butterscotch chips and chocolate chips too. That's the beauty of these cookies, they can be made with any flavor of chocolate.

Can I Use Peanut Butter Instead of Peanut Butter Chips?

Of course, you can use peanut butter instead of peanut butter chips. I recommend using creamy peanut butter if you do and a brand that isn't the oily separating kind or crunchy peanut butter. Those will give the cookies a different consistency.

​Can I Use Any Type of Chow Mein Noodle?

You can use any type of cooked chow mein noodle for this recipe. The key is to make sure that they are quick-cooked, like the ones in the international aisle at your grocery store, or with the salad toppings. The cooked crispy noodles give these cookies their signature crunch.

How to Make Haystack Cookies

  1. Line a baking sheet or cookie sheet with parchment paper or wax paper.
  2. Combine the milk chocolate chips and peanut butter chips in a double boiler over boiling water. Stir until melted and smooth, about 8 to 10 minutes.
  3. Combine melted chocolate peanut butter chips with chow mein noodles in a large bowl. Stir until well-coated.
  4. Use a cookie scoop to drop the mixture onto the parchment paper-lined baking sheet.
  5. Form the mixture into nest-shaped cookies, making a well in the middle to place your chocolate Easter eggs in the center of each cookie nest.
  6. Let the chocolate set out or in the freezer before serving.

Tips For Making This Happy Recipe

  • If you prefer melting your chocolate and peanut butter chips in the microwave instead of a double boiler, use a large microwave-safe bowl and heat in 30-second increments string in between until smooth.
  • When forming the nest, if you find it difficult to make on a baking sheet, you can also use a muffin pan and place the nest into the cup of the muffin tins which will help in forming the well of the nest.
  • If you cannot find the Cadbury Mini Eggs for this recipe, any Easter candy works. Robin’s Eggs (Malted milk eggs), jelly beans, or M&Ms.
  • In place of the chow mein noodles, you can also use chopped pretzel sticks or shredded coconut.
